Vinification: Destemming, followed by maceration and gentle crushing of grapes

Fermentation: Single vintage with a “pied-de-cuve” using indigenous yeasts only, starting in steel tanks and bottled at desired sugar residual for final part of (bottle) fermentation.

Sulphur: values can vary from 15 to 50 mg/l., added or not, depending on the quality of grapes and stability of the wine
