First fermentation: base wine from single vintage starting with a “pied-de-cuve” using indigenous yeasts only (steel tanks)
Second fermentation: with must of same vintage (bottle fermentation)
Disgorged: no – sur lies, deposit of second fermentation remains in bottle
Fining: No
Filtering: Only on base wine after first fermentation – final product is not filtered
Sulphur: values can vary from 15 to 50 mg/l., added or not, depending on the quality of grapes and stability of the wine.
